1 whole sea bass, snapper, or cod, 3 to 4 pounds, cleaned
3 teaspoons kosher salt
6 tablespoons fresh lemon juice
2 teaspoons finely minced garlic
3 tablespoons ground toasted cumin
2 tablespoons sweet paprika
½ teaspoon freshly ground black pepper
½ cup olive oil
½ cup chopped fresh flat-leaf parsley or cilantro (optional)

Rub the fish inside and out with 2 teaspoons of the salt, then rinse with cool water. Cut 3 or 4 evenly spaced diagonal slits on both sides of the body.
In a bowl, combine the lemon juice, garlic, cumin, paprika, the remaining 1 teaspoon salt, and the pepper. Whisk in the oil. Rub the mixture inside and outside of the fish, making sure to get some into the slits on each side.
To bake the fish, preheat the oven to 450°F. Wrap the fish in lightly oiled foil, place in a baking pan, and bake for 25 to 30 minutes. To check for doneness, open the foil and test with a knife tip. The fish should be opaque near the bone and the flesh should flake evenly. To broil or grill the fish, omit the foil and cook for 10 minutes on each side. Serve hot, garnished with the parsley.
